Farm to Table Restaurant and Bar
Cotton Tree Lodge includes an organic farm and you are invited to explore the farm during your stay. Our fruit trees include mangoes, pineapple, star fruit, custard apple, soursop, bananas, papaya, plantain, orange, and grapefruit. Our garden grows a variety of salad greens, root vegetables like coco yam, cabbage, callaloo, tomato, cucumber, sweet potatoes, and much more.
We raise free range chickens for eggs and meat, goats for milk, cheese, and meat; and are starting to raise pigs as we already cure our own bacon. We also source catfish and snook just downriver from the lodge.
In addition, we feature wild harvested edibles from the rainforest such as jippi jappa, cohune cabbage (heart of palm), and many others.
Our menu is influenced by a blend of Belizean, American, and European cuisine, utilizing as much as we can from our own farm and nearby farms. The majority of what we serve is sourced from within 10 miles of the lodge. We are committed to maintaining a direct connection to where our food is coming from and how it is grown/raised.
Jeff, I wanted to write this letter and thank you and your team for a mind-blowing experience at Cotton Tree Lodge in Belize. The food was amazing, the lodge itself was breathtaking, and the excursions were all once-in-a-lifetime opportunities.
I want you to all to know what you've created out there is incredibly special. My health challenges and nutritional needs made travel for me virtually impossible, but you opened my eyes that it's possible not only for me to travel, but to maintain great health and energy while on vacation and return home feeling better than when I left!
I want to commend your gardeners on creating beautiful, healthy soil and growing their wonderful produce chemical free. I want to thank your farm-hands for the attention they give to the livestock-keeping them pastured and well cared for. I want to thank your kitchen staff for customizing my menu and schedule to fit my dietary needs and care for my food sensitivities. I want to thank your incredible tour guides and boat captains for the caving, the scuba diving, the fishing, the ruins, and the incredible company they brought to every beautiful experience, and I want to thank you. Jeff, for the love, care, and intention you are bringing to the space at Cotton Tree.
Your commitment, Jeff, to those who stay with you goes beyond anything I've ever seen in the travel world. I'm not sure if you offer all your guests the ability to send you seed in advance, planting specifically items they send you, but that statement to me-that my health needs and nutrition was a priority to you-was such a testament of commitment to your guests.
If you ever need anything from me as it relates to a testimonial, or if you ever want consultation from a regenerative farmer or Permaculture designer, I'd be happy to accommodate (and honored to give back as a "thank you"). Our restaurant is located in the Main Lodge and serves breakfast, lunch, and dinner.
We offer set menus that change daily and willing and able to accommodate almost all dietary restrictions and food sensitivities.
Breakfast consists of eggs made to order plus a hot buffet including fresh tropical fruit and fresh squeezed juices, homemade tortillas, breads and flapjacks, breakfast meats, tea and coffee. For lunches we serve traditional items like burritos, stewed chicken, rice and beans, and salads. Dinners begin with appetizers at the bar followed by a four-course seated meal of soup, salad, entrée, and dessert. A snack menu is available for all our guests between meals times.
The Cotton Tree Lodge bar in the Main Lodge serves wines, local and imported beers, and a full menu of cocktails prepared with fresh fruit juices. Nightly drink specials and appetizers make the bar a popular gathering spot before dinner. On clear nights we also serve drinks down at our riverside bar, allowing guests to enjoy their drinks and good company under the stars.
